If you are trying out new food options, like a Mediterranean diet, you have a plethora of food options for meals to create in your convenient little oven. Don’t limit your culinary flair to the microwave, add some spice to your breakfast, lunch, and dinner options.

2 Microwave Meals for College Students on a Mediterranean Diet

Whether you’re whipping up some meals in the dorm room, or you are too lazy to visit a Mediterranean restaurant, these three microwave meals for college students help you get fed during the busy week.

Basil, artichoke, and tuna stuffed potatoes

With the essentials of traditional Mediterranean food, upgrade your baked potato with these scrumptious toppings.

  • One plum tomato
  • ½ cup chopped basil
  • Two scallions
  • Two cans of chunk light tuna
  • Four medium russet potatoes
  • ½ teaspoon of ground pepper
  • ¼ teaspoon of salt
  • ¾ cup of nonfat plain Greek yogurt
  • One 6 oz jar of marinated artichoke hearts
  • ¾ cup of shredded provolone cheese

Poke holes in all the potatoes and cook in the microwave for 20 minutes, turning them once or twice.

Mix the yogurt, basil, tuna, artichoke hearts, scallions, capers, salt, and pepper in a large bowl. With the cooked potatoes, cut a third of the top off and scoop out the inside and add them to the tuna mixture. Spread the mixture into the potatoes and top with the shredded cheese.

Frozen Veggie Medley with a Mediterranean Twist

You can add some Mediterranean spice to your average frozen vegetable medley for a zesty kick to your taste buds.

  • ¼ cup chopped sun-dried tomatoes
  • ½ cup of lemon juice
  • ½ cup water
  • Two tablespoons of extra-virgin olive oil
  • ½ cup of black olives
  • Four cups of broccoli florets
  • ½ teaspoon of dried oregano
  • Four cups of cauliflower florets
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon sugar

In a large microwaveable bowl, place cauliflower, broccoli, and water in the microwave for four minutes. Drain the water and set aside

Mix the olive oil, lemon juice, garlic powder, sugar, salt, and oregano in another bowl. Toss in the steamed vegetables, olives, and tomatoes into the dressing. Serve and drizzle remaining dressing.
